Both are good options! As for which type is better for your dog specifically, that will depend on their preferences, as well as what kind of needs the bed is intended to address.
Let's start with preferences—do you know if your dog likes softer beds, or do they prefer to sprawl out on firmer surfaces? If you're not sure, consider the beds you've given your dog in the past. If they've typically been a soft or plump kind, your dog is probably going to be more used to a soft bed and will take to that most easily. If you've typically gotten them orthopedic beds or elevated beds, they are probably more used to (and more comfortable on) a firm surface.

If you haven't actually gotten your dog yet, a softer bed is usually a safer bet than a firmer one. Firmer beds can be an acquired taste for some pups. If your dog likes both types of beds equally, then consider what you want the bed for, the size and breed of your dog, and their age.
First and foremost, if you have a big dog (90 lbs+) or a young pup from a breed that's going to be big, the orthopedic style beds will offer the best long-term comfort and will always provide adequate support for their hips, joints, and spine. For that same reason, any breed of dog prone to hip dysplasia or arthritis—even if they are on the smaller side—will benefit from having an orthopedic bed. Senior dogs, especially those that tend to suffer from stiffness or mobility issues, will usually have an easier time with an orthopedic bed, since the dense foam provides a firm and stable surface under their paws.
If you have a smaller dog or one that likes to burrow or nestle into their bedding, they'll do best with the pillow style. The soft fill in these beds will let your pet sink down and surround themselves in comfort. These beds are also good for dogs that like to dig, since the filling will shift to accommodate repeated scratching motions.
